Berry Ice Cubes with Yoghurt Froth

Do you find the shift of season magical? I do.

A few days back it was winter and cold, and suddenly this week, spring—the feast of blossom—is in the air. 

It is not that I don’t enjoy winter, mind you. In fact I love winter season. Especially the winter months in Qatar. But, it is always a welcome change when spring is here. 





I have been waiting for this gorgeous weather. I've been waiting to open the windows, blow out the stale winter energy, and get some fresh breath of air into the rooms. I’ve been waiting to sep out, to enjoy the breeze and tiny blossoms without the burden of layered clothes, ha.

Besides, spring is a good time to set the table, get out the best china and celebrate new beginnings with family and friends—outdoors or indoors. Great company, memorable times, wonderful food. Smiles and hugs, too. What more could you ask for?

Here’s a charming drink to mark the occasion—it's pink and white, and fabulous. 

Something different from the regular smoothies or fruit juices. It sure looks dreamy and sophisticated, but in truth it is just strawberry ice cubes topped with silky yogurt and club soda—a smart idea to add pizzazz to your glasses. These ice cubes are delicious to suck on its own, and when added to a drink they melt slowly to diffuse the fruity flavor. 

Freeze your favorite fruit puree or fresh juice in an ice cube tray, and serve with yoghurt to sip on a sunshine filled day.

It can be a delicious welcome drink for entertaining, or dessert in a glass for a long, leisurely and filling breakfast. Whatever, it’s guaranteed to make a splash. And kids just love it!

Berry Ice Cubes with Yoghurt Froth

Ingredients
Serves 1 tall glass, or 2 medium glasses
Prep: 10 min, plus freezing time

1 cup strawberries, rinsed and hulled
sugar, to taste
yogurt, as desired
club soda or sparkling water (optional)


Directions

Make a puree of strawberries in an electric grinder, add sugar to taste. Pour the berry puree into an ice tray and freeze until set, about 1-2 hours.

Half fill a tall glass with the fruity ice cubes, add a dollop of yogurt, and then top with soda or sparkling water, if using. Serve with a straw. Voila! It’s time for compliments—enjoy.

You can experiment with different fruit flavors or use fresh juices to make the ice cubes. Another variation is to make ice cubes from small or cut fruits and use it to dress up a pitcher of clear, cold beverage like lemonade.

  48. @Thoma: Sorry about the delay, sweetie, I had no net connection y'day. Anyways this is just a quack note before I rush out: Most times, like in these pictures, I use white foam board for bright white, seamless background. Alternatively, you can use white bedsheet or anything that's solid white- I hope you get the idea. And hey the foam boards are very cheap and available at most stationery stores, check it out.

    You don't have to hull the berries if you are using the whole fruit to make the ice cubes (you'll see a pic in my next post). However you do need to do this before you puree the fruit to make the berry cubes! ;) Hey, did you try just sucking those cubes out of the freezer- it tastes wonderful- something like sip-up!
