Grilled Chicken Mortadella Sandwich

I guess I’m coming down with a cold, so I’m not staying for a chat.

This is another no fuss recipe. All you need to do is fill two slices of Italian bread with the ingredients and grill—nothing can go wrong. My family enjoys the balance of flavors and textures offered by this delicious, warm sandwich. Oh, and it's healthy too—total guilt free indulgence! I hope you try it and enjoy it as much as we do.
Grilled Chicken Mortadella Sandwich

Ingredients
Makes 1 sandwich
Prep + cooking: 10 min

2 slices of fresh multi-cereal bread
2 slices of chicken mortadella with olives, or any other flavor
4 fresh frisee lettuce leaves or iceberg, rinsed
2 slices of tomato
1 tablespoon sliced jalapeños (I used Casa Fiesta)
1 tablespoon sliced black olives
1 teaspoon garlic mayonnaise (I used Mazola)
olive oil
 
Directions

Preheat the electric sandwich grill or panini press while assembling the sandwich.

Place bread on a clean cutting board. Put a slice of mortadella, pile the lettuce leaves on top, and squirt few drops of olive oil and the mayo. Layer with black olives, jalapeños, tomatoes and the other mortadella slice. Finally, top with the second slice of bread.

Place on the panini press, close, and grill 2-3 minutes until bread is crisp with golden brown grill marks. Slice in half on the diagonal and serve warm.

If you don't have an electric grill, use a pan to make it. Preheat a nonstick frying pan and place the sandwich in it. Cover top of sandwich with pieces of aluminum foil and place another heavy pan over it to act as a press. Fry for 2-3 minutes until golden brown. Carefully flip over and fry the other side. Enjoy!
